Carrot salad

It doesn't look like much but this one is a winner - it is super simple to prepare and the children are always fighting over it to finish the dish. Everything is in the salad dressing!

Carrots are obviously a great vegetable: rich in provitamin A, it gives you a great skin and it protects your vision.

If you add parsley, it will also provide a lot of provitamin A. And it is rich in iron, folate, vitamins C ans K.

Ingredients:

250g carrots

1/2 red onion or 1shallot

1 tsp pomegranate molasse

1 tbsp red wine vinegar

3 tbsp olive oil

Salt & pepper

1-2 tbsp parsley (optional)

  • Prepare the dressing by mixing the pomegranate molasse, the vinegar and a pinch of salt together. Thinly dice the shallot (or red onion) and add to the vinegar mixture. Finally add in the olive oil and the parsley.

  • Clean, peel and grate the carrots.

  • Mix the dressing with the carrots.

It is ready to serve but it can be prepared in advance - keep it in the fridge until needed.
