It doesn't look like much but this one is a winner - it is super simple to prepare and the children are always fighting over it to finish the dish. Everything is in the salad dressing!
Carrots are obviously a great vegetable: rich in provitamin A, it gives you a great skin and it protects your vision.
If you add parsley, it will also provide a lot of provitamin A. And it is rich in iron, folate, vitamins C ans K.
Ingredients:
250g carrots
1/2 red onion or 1shallot
1 tsp pomegranate molasse
1 tbsp red wine vinegar
3 tbsp olive oil
Salt & pepper
1-2 tbsp parsley (optional)
Prepare the dressing by mixing the pomegranate molasse, the vinegar and a pinch of salt together. Thinly dice the shallot (or red onion) and add to the vinegar mixture. Finally add in the olive oil and the parsley.
Clean, peel and grate the carrots.
Mix the dressing with the carrots.
It is ready to serve but it can be prepared in advance - keep it in the fridge until needed.
